What field of study do I go into if I wanted to learn how to create Audio Software?

Yeah, if you want to actually write the software yourself, or have a major role in designing how it works in a technical sense, you primarily need to learn computer programming (particularly the C++ language and its relatives).

If you also (or instead) want to work with the overall design of the software from a musical perspective, learning music theory and if possible learning about various algorithms used to create and manipulate digital audio would be good. It would also help to learn about analog music hardware and how it works since there is a lot of demand for accurate digital models of these analog processes and devices.

Computer science or software engineering, and at least one course on digital signal processing (DSP).
