Sampling Setup Suggestions & Tips

I am looking to do some field sampling and was wondering if you guys had any tips or suggestions for me.

Here's what gear I have right now:

AKG C3000B
Shure SM57
Apogee Duet
iPhone 4S

I only have a Mac Pro right now, though I am looking to get a laptop within the next year. So, aside from the laptop which I'll eventually be getting, is there anything I can do with the gear I have now and let's say, a $200-300 price budget.

What would be a good setup with the laptop included?

Can I get by with using the iPhone 4S and some sort of interface and mic with it?

What are good sampling mics?

Any help, tips or suggestions would be greatly appreciated!

save up a bit more and buy this

For field sampling I'd recommend recording to a handheld portable device like the Zoom H4n. :-)
