The technical concerns are interesting. I understand the challenge of moving more information but with the instruments, how is it different from other polyphonic values? Why weren't they programmed with poly aftertouch to begin with? As for interest, if you build it, they will come.
The bandwidth restrictions come from the MIDI standard mostly, which is going on its 3rd decade of use.

MIDI 2.0 is coming soon, and along with the increased adoption of OSC hopefully more information will be available to sent from (and now to) MIDI controllers.
