MIDI Implementation - Please Respond

Can you disable the default MIDI implementation?

Using edit MIDI remote, I mapped a few controllors for a Subtractor synth and discovered that the new mapping worked along with the default mapping- so that a controller used both mappings?

Is this what is supposed to happen? Does everyone just use the standard default MIDI implementation?

Also, when you use a controller such as the x-session or the Edirol PC-50- (I have both of these) and you want to control more than the available buttons and sliders- what do you do? Do you jump to a different MIDI channel, map more there and jump there live or do you use 2 or more saved memory sets and jump on the fly?

Thanks for your help,
